Method

  1. Crust for Crispy Catfish

    • Heat a pan and add olive oil, followed by garlic, lemongrass, chopped galangal, and kaffir lime leaves. Sauté until fragrant, then season with black pepper and Knorr Chicken Flavor Seasoning, sure to be delicious
    • Then, remove from heat and let cool. Mix with the finely chopped crispy catfish, adding the unsalted butter and combining everything well. Set aside
  2. Steps to Make Baked Fish

    • Season the grouper fish with salt and a little black pepper, then mix well.
    • Heat a pan over medium heat and add olive oil. Once hot, place the grouper fish in the pan and grill until both sides are beautifully browned. Also, press the skin side down in the pan until it turns golden.
    • Scoop it up and place it on a baking tray. Spread the crispy catfish crust evenly over the top of the fish.
    • Place it in the oven at 180°C for about 5-8 minutes, until the fish is cooked and the crust is crispy and beautifully colored. Remove from the oven
  3. Steps to Make Catfish Coconut Soup

    • Place a pot with clean water over heat. Once boiling, add Knorr chicken flavor soup, sliced young galangal, crushed lemongrass, crushed red onion, torn kaffir lime leaves, and catfish meat. Boil for a moment to release the aromas
    • Reduce the heat and add coconut milk. Season with fish sauce, taste, and adjust the flavors as needed. Add cilantro and crushed bird's eye chili. Turn off the heat and season with Knorr lemon flavor powder
    • Strain the coconut soup through a sieve and set the broth aside in the pot
  4. Steps for Serving

    • Arrange the baked fish on a serving plate. With grilled mushrooms and grilled zucchini
    • Add the catfish coconut soup and garnish with chili paste oil, cilantro oil, edible flowers, or microgreens for a beautiful presentation. It's ready to serve
